Topic Five : Chocolate Works

Our last product in this class we learn on how to do Chocolate Works. Same as pastillage, but used chocolate instead of sugar, the first step we have to sketch the design for our chocolate work first. Then, we start to make the chocolate!

The steps are :

1. Melt the chocolate using double-boil method.

2. Then pour the chocolate into a large tray and let it cool in the chiller.

3. After the chocolate have set up. Carefully cut it into your design.

4. After done with the cutting. Set aside the chocolate in the chiller and start build the based and let it cool in the chiller.

5. Done with all that. Glue all together the pieces using melted chocolate.

6. Get creative. Use anything you can to make something out of the chocolate.

We were also taught on how to make a chocolate flower. But this time using different recipes which is not so different just mixed the melted chocolate with corn syrup that have been heated up to let it melt and cocoa powder. Mixed all together until it formed a dough. Then start making a flower petals from the dough. Just like your play with your playdough when you are little.

Then! Decorate the flowers ikut sukaaaaaaaaa. Done! Tadaaaaaaaaa!

Topic Four : Dead Dough

Dead dough, also known as bakers clay, is basically dough without yeast, or any leavening agent. Our task for this topic are to make a bread basket and four type of bread using the dead dough, which is Baguette , Focasses, Knot bread and Wheat bread.

Below are the recipes for the dead dough.

Let see the steps below :

1. Firstly, mixed all the ingredients together.

2. Then roll out the dough an start making the basket.

3. Done with the basket. Start making the bread. Like the real bread, thats how you make this. Then baked the bread in the oven for 40 minutes or depends on the bread size on180C.

4. Done baking! It will look like this! Like a real bread. Then decorate it in the bread basket you make earlier.

Tadaaaaaaaaaaaa!

Topic Three : Pastillage

# Pastillage is a sugar-based dough used for decorating and creating decorations for pastry, showpiece work and decorative molded forms. The dough is much like clay or play-dough where you can knead it and roll it out. Pastillage is worked then allowed to dry, setting up to a hard, sugar-based decoration. Depending on the mix, pastillage can be formed and sanded to remove any rough spots after it has completely dried.

For our third topic, we were asked to create a pastillage sculpture. As usual, before start making a product we need to decide what shaped are we going to make and skectch it on a manila card.

There are many, many recipes out there and most have the same ingredients. Below are the recipe to make the dough.

1. Firstly, mix well all the ingredients until it formed a dough.

2. Roll the dough quickly on a flat surface until bla bla. Just like you roll a pizza dough.

3. Then carve the dough by using the manila card that have been cut to trace the shaped.

4. After done with the cutting. Let it dry. Meanwhile , make the based for the pastillage to stand.

5. After the pastillage have been dry, glue all the pastillage together on the based.

Doneeeeeeee!

Topic Two : Butter Sculpture

Our second product is Butter Sculpture. For a beginner like us, we use a styrofoam as a based of the butter sculpture. Like in the first topic, we have to sketch and carve the styrofoam first before coating it with butter. For this topic we have to carve a fish.

The utensils and other things needed are :

  • Styrofoam
  • Charcoal pencil
  • Knife or cutter
  • Butter
  • Kain (for easier to clean your hand)

Let see how the process being done :

1. Firstly draw a shaped of a fish by using charcoal pencil.

2. Trim the styrofoam until you get like this. (refer to topic one)

3. Then coated the styrofoam with butter.
